Squid are found in the waters around Arctic Islands found around far out on the map of the map. You can cook them using a Campfire.
If you want to sell them, you can go to Martinel at Emei Town in the Frozen Lands.
Squid can be refined in a Refinery to create Ink which is a very important late-game crafting resource.
